Why We Distill in
San Francisco De Sales

San Francisco de Sales is the home of Desquite, the place where we transform our cane fields into a world-class crafted spirit.

The first thing we need to understand are the three main ingredients of Desquite: organic sugarcane molasses, pure spring water and natural anise. Given its altitude and climate, San Francisco de Sales is a perfect place to cultivate sugarcane year round. In fact, it’s among the top panela producing regions in the country, making it easy to source molasses.

Through Hacienda La Carlina, our home,  3 different creeks pass through, making it ideal for sourcing pure water that comes down from its spring in the El Tablazo mountain, located in the Gualivá Province.

Moreover, being in the countryside allows us, from the distillery, to support the growth of local farmers, hiring some of them directly as workers and purchasing sugar cane from our neighbors.

For these reasons, San Francisco is the ideal place to make Desquite.
