Part of the essence of Desquite is being artisanal or crafted, a characteristic that makes it unique in its category. Being Crafted is about returning to the local, rediscovering our traditions using only what is necessary

All the sugar cane used in the making of Desquite comes from local sugar cane farmers. We cultivate a portion of the cane we use at Hacienda La Carlina, the rest comes from our neighbors and fellow cane growers or panela producers.

To make our molasses, we first extract the cane juice using our traditional grinder, we then evaporate about 50% of the water in the juice by applying heat in large boiling pans using a horizontal oven.

The molasses are then rehydrated and fermented for 5 days under strict controlled conditions to ensure quality and obtain a constant profile.

We then distill the obtained mash in a hybrid 9-plate copper still. Our process is slow and requires patience, the same kind of patience that any artisan has to make its local products.

Finally, we add our natural anise and cut to proof our distilled Aguardiente with treated spring water slowly, taking almost 10 additional days to have a perfect drink.

This slow, patient process makes Desquite a truly crafted aguardiente, different from the industrial options that have been available in the Colombian market for years. We are special, and we know it. We are clear that it’s not about quantity but about quality, care, and attention to detail to create something truly unique.
